If you know your pizza, you know there’s at least one style for every region. In this class, Marie Rutherford will show you the ways that sfincione Siciliano differs from Neapolitan pizza and from the Sicilian-American variety. You’ll make sfincione palermitano, the traditional Sicilian pizza, topped with caramelized onions, tomato paste, anchovies, caciocavallo, and seasoned breadcrumbs; and sfincione bagherese, the Sicilian white pie, topped with garlic oil, thinly sliced potato, sliced lemon, ricotta, sesame seeds, and fennel pollen. You’ll round out the meal with chickpeas and roasted sweet potato with fennel and treviso; and to accompany it all, latte di mandorla freddo, a Sicilian iced almond drink with orange blossom water, lemon peel, mint leaf, and decaf coffee.
