Seafood Canning and Preservation

Duration: 3 hoursType: In-PersonPrice: $145

It’s no secret that we in the PNW have access to some of the best seafood in the world - so why not make it last a little longer? Join Joe Bayley and learn how to make the most of your fresh catch and expand your home food preservation skills. This class will teach you the essential methods for preserving seafood while maintaining its quality, flavor, and safety. You’ll learn how to can fresh tuna that you’ll use for tuna salad with fennel and tarragon; and how to salt-cure cod that you’ll add to a Catalonian salad with bitter greens, olives, and hazelnuts. You’ll round out the feast with mussels en escabeche (fresh mussels steamed and marinated in pimentón and sherry vinaigrette); smoked salmon rillette with creme fraiche, shallot, and herbs.

Please note: some classes can be adjusted for students with dietary restrictions, but many cannot. If you’re vegetarian, pescatarian, or gluten-free, you can use the drop-down menu on our events page to view the best classes to fit your needs. If a class you’re interested in doesn’t appear in that filtered view, please email us before registering and we’ll see if the class’s menu can be modified.

Cancellation Policy

All class and event purchases at The Pantry are non-refundable. If you’re unable to attend, you are always welcome to transfer your ticket to a friend or family member.

We understand that plans can change. When possible, we are happy to offer a credit or a transfer to a future event if we are able to fill your spot from our waitlist. Because our classes are small and ingredient-driven, this is not guaranteed and depends on demand and timing. Cancellations made within 48 hours of the event are not eligible for credit or transfer, as we are typically unable to fill those spots on short notice.
