Joe Bayley is here to bring us the sweet and smoky Ihaw-Ihaw (grill-grill) — one of the most popular barbecue techniques in the Philippines. In this class you’ll learn the history of inihaw, and how it has been married with American flavors for a cuisine that is entirely its own. On the menu: brown sugar-glazed barbecue pork skewers and sweet-glazed chicken skewers with soy glaze and sesame; talong (marinated and grilled eggplant with garlic vinegar); lemon baguio beans (green beans sauteed with tomatoes, red onions, and bacon); and garlic rice.
