Just about every culture has a version of roast chicken, but Peruvian pollo a la brasa is something special — it’s one of the country’s most popular culinary exports, and it even has its own national day of celebration in Peru. The classic pollo a la brasa is cooked low and slow over coals or a wood fire, and is usually served with French fries. In this class, Gino Garcia will teach you how to make pollo a la brasa in your home oven – and he’ll take you deeper into Peruvian culinary traditions by serving it with arroz verde; yuquitas (fried yucca); aji pollero (amarillo chile sauce); and salsa criolla (julienned peppers and onions with cilantro and lime).

All class and event purchases at The Pantry are non-refundable. If you’re unable to attend, you are always welcome to transfer your ticket to a friend or family member.
