Thali is a traditional Indian meal consisting of a variety of small dishes, each carefully chosen to complement the others, offering an array of tastes and textures on one plate. In this class, Prajakta Patil, will teach you how to prepare a traditional Indian thali at home with some of her favorite recipes from the western state of Maharashtra. You’ll make amti bhaat (dal and rice) flavored with tadka, tomato, and curry leaf); sabudana vada (fried sago pearl fritters with peanuts and chillies); cucumber chutney; thecha (a fiery condiment with green chillies and garlic); dhobli mirchi bhaji (a dry spicy capsicum curry); from-scratch roti (flatbread made with whole wheat flour); and shrikhand (sweet yogurt dessert flavored with cardamom and saffron).
