Biryani is one of India’s most beloved and cherished dishes, with hundreds of different varieties, but it can sometimes be intimidating to cook at home. Esha Bhandarkar grew up in India learning how to cook from her mother, and in this class she’ll spin her traditional family recipe into a dish that’s more accessible for Western kitchens. Learning techniques about layering and spice, you’ll make murgh dum biryani (chicken cooked with saffron-scented basmati rice and potatoes); pudine aur pyaz ka raita (yogurt dip with red onion and dried mint); and tamatar ki chutney (tomato chutney with raisins and apricots). Round out the evening with gulab lassi (rose yogurt drink), the perfect cooling and tasty beverage to accompany this feast of flavors.
