Vindi Rathnayake was born and raised in Sri Lanka; so when she says street food is Sri Lankan cuisine at its finest, we believe her! In this class Vindi will teach you about balancing spices and traditional cooking techniques as you make some of her favorite food stall classics. On the menu:, appa, also known as hoppers, (crispy, lacy pancakes made from rice flour and coconut milk) and biththara appa (hoppers topped with a fried egg); Sri Lankan chicken red curry; koththu (chopped roti stir-fried with cabbage, leeks, carrots, onions, and chicken); and lunu miris (chili and lime chutney). Since no streetside meal is complete without a sweet treat, you’ll also make bibikkan, a spiced cake made with coconut, dates, and jaggery.
Please note: some classes can be adjusted for students with dietary restrictions, but many cannot. If a class you’re interested in doesn’t appear in that filtered view, please email us before registering and we’ll see if the class’s menu can be modified.
All class and event purchases at The Pantry are non-refundable. If you’re unable to attend, you are always welcome to transfer your ticket to a friend or family member.
We understand that plans can change. When possible, we are happy to offer a credit or a transfer to a future event if we are able to fill your spot from our waitlist. Because our classes are small and ingredient-driven, this is not guaranteed and depends on demand and timing. Cancellations made within 48 hours of the event are not eligible for credit or transfer, as we are typically unable to fill those spots on short notice.
