For people of Mexican heritage, tacos de guisado (or stew tacos) – are the heart and soul of the taco world. If al pastor and carnitas represent the street eats of Mexico, tacos de guisado tell the story of homecooking at its finest. These deceptively humble-looking “stews” offer comfort, depth of flavor, and endless variety, and can be scooped up with a tortilla. In this class Gino Garcia will teach you some of his favorites: freshly fried chicharrón en salsa verde (pork belly in green salsa); tinga de pollo con chorizo (shredded chicken in chorizo, chipotle, and tomato sauce)), and rajas con crema (roasted poblano chiles in a creamy cheese sauce), all served alongside a pile of warm homemade corn tortillas.

We understand that plans can change. When possible, we are happy to offer a credit or a transfer to a future event if we are able to fill your spot from our waitlist. Because our classes are small and ingredient-driven, this is not guaranteed and depends on demand and timing. Cancellations made within 48 hours of the event are not eligible for credit or transfer, as we are typically unable to fill those spots on short notice.
