Few cuisines conjure up as much devotion — and furious debate — as the food of the Italians who immigrated to the United States. Whether you grew up like Carmela Soprano eating baked ziti at every family gathering, or you learned everything you know about Italian-American food from the spaghetti scene in Lady and the Tramp, you’ll find something delicious here. In this class Nicco Muratore will show you how to make classic “Sunday sauce”, a slow-cooked tomato sauce, that you’ll use to cook nonna’s fennel sausage and beef meatballs with basil and bucatini, as well as a family recipe for stuffed eggplant parmesan with mozzarella and ricotta. You’ll fill out the table with an antipasto salad of salami, prosciutto, mortadella, roasted peppers, marinated olives and mushrooms, and anchovy dressing; and sauteed broccoli rabe with chili and garlic.
