In this installment of our series on street food from around the world, we’ll be hitting the food stalls of Tehran! Join Omid Roustaei as he shares his favorites of baghali pokhteh (fava beans dressed with olive oil, vinegar, and hogweed powder); laboo, or hot beets in a sweet syrup — it’s as simple as it sounds; yeralma yumurta (smashed buttery potato, egg, feta, and mint wrapped in homemade lavash bread); and tahchin morgh ba zereshk (savory rice cakes with sweetened barberries and saffron chicken). Along the way you’ll brush up on the Persian method of making rice, and you’ll finish class with a proper street-food feast.
