During holidays and family gatherings, Indian home kitchens are transformed into makeshift gulab jamun factories, churning out hundreds of these fried milk ball donuts. Join Shri Repp in class to learn techniques for mastering the elusive process of making the perfect spongy gulab jamun – soft enough to soak up syrup, but sturdy enough to keep its iconic round shape. You make two varieties of gulab jamuns, one soaked in a cardamom, rose water, and saffron syrup and one stuffed with an assortment of mixed nuts and then rolled in coconut flakes. You’ll pair the warm gulab jamuns with homemade pistachio ice cream and crunchy bits of chikkis (peanut brittle sweetened with jaggery).
