Kathi rolls, a traditional on-the-go lunch for city dwellers, are common throughout India. In this class, Esha Bhandarkar will dive into this street food classic using some of her favorite recipes. You’ll make whole wheat egg roti from scratch, and fill them with keema pav, (stir-fried spiced lamb); mirchi bajji (fried green peppers stuffed with peanuts and potatoes); cilantro chutney; and sonth chutney made with tamarind and jaggery. We’ll end the evening with sheera, a sweet semolina pudding with ghee and saffron.
