If there’s anyone who’s qualified to teach Pacific Northwest cooking it’s Bruce Naftaly, who has been described by various publications as the father, the godfather, and even the grandfather of Northwest cuisine. He’s been the head chef or the chef/owner of some of Seattle’s most notable restaurants, including The Other Place, Les Copains, the Alexis Hotel, Le Gourmand, and Marmite, and pioneered Seattle’s local farm-to-table movement.
Along the way Bruce has spent many years as a cooking instructor, and remains an avid supporter of local organic producers, the PCC Land Trust and other organizations dedicated to preserving local farmland and sustainability. In the Pantry kitchen, Bruce can be found sharing his passion for seasonal foods and classic French techniques.
