Chocolate or Black Sesame Mochi Cake

Pandan or Ube Mochi Waffles

Shopping List:


Pieces of fruit or berries of choice (optional)


3 cups plus 2 teaspoons milk (or plain plant-based milk or water)

Dry Goods / Pantry:

6 1/2 cups (620 grams) glutinous rice flour

1/4 cup rice flour

4 tablespoons cornstarch

2 1/2 teaspoons baking powder

2 cups granulated sugar

2 teaspoons of pandan or ube extract (use the kind with color)

6 tablespoons neutral oil or butter

2 tablespoons miso

1/5 cup sweetened condensed milk, honey, or maple or agave syrup

Kosher salt

If you are making the Chocolate Mochi Cake:

2 tablespoons Dutch-processed cocoa powder

1/3 cup semi-sweet chocolate chips

If you are making the Black Sesame Mochi Cake:

2 tablespoons black sesame powder

2 tablespoons black sesame


4 large eggs or 200 grams silken tofu

Equipment List:

Shallow heatproof bowl

Whisk or chopsticks for mixing

1 bamboo steamer with lid and 1 wok or 1 steamer rack, 1 shallow bowl, aluminum foil, and a pot with a lid

Stand mixer fitted with paddle attachment (optional)


8-inch round cake pan

Cooking spray

Parchment paper circle/ Parchment paper

Large mixing bowl

Toothpick or bamboo skewer

Wire rack (optional)

Knife to cut the mochi and fruit if using fruit

Powder sugar or flour duster or shaker

Blender or a mixing bowl and whisk
