While the Basque language is like nothing else in Europe, the cuisine in this region, which spans Spain and France, shows the influences of both. It is also a culture both steeped in traditional cooking methods and a hub for culinary innovation. In this class Stefan Milne will dive into the flavors and history of the Basque region while teaching you how to cook up some classic dishes at home. On the menu: setas confitadas (mushroom confit) on country bread; txipis tinta (squid cooked in its own ink) with rice; rollitos de filetes de lenguado with piperrada (petrale sole rolled with Spanish ham in a Basque pepper and tomato stew); and gazta tarta (Basque cheesecake) with preserved cherries.

If we get any takers, we can then issue you a credit. The chances of finding a replacement are higher with as much advance notice as possible, so please let us know as soon as possible if you need to cancel.
