In this installment of our series on street food from around the world, we’ll be hitting the night markets of Taiwan! Join Eileen Chou as she teaches you about some of her favorite comfort foods, with lots of tips and tricks along the way. You’ll make shou zhua bing (flaky scallion pancakes); lu rou fan (Taiwanese braised pork rice bowl); o-a-chian (pan-fried omelet with oysters and greens); and gua bao (steamed buns filled with pork belly and pickled mustard greens).
