Puff pastry, or pâte feuilletée, is the finest example of the luscious, flakey layers you can achieve through lamination — the art of carefully layering together butter and dough as many times as physically possible before baking it to crispy perfection. Join us in this hands-on class with Emma Le Du and learn how it is done. In this class you’ll fold in hundreds of buttery layers on your way to making both chicken and vegetarian vol au vent (beautifully stuffable towers of puff pastry); galette des rois (sweet and flakey almond cake), a fun and lovely French tradition in the month of January; and palmiers (crisp cinnamon sugar cookies).
Please note: While this menu includes chicken, it can easily be left out for a vegetarian guest. If you’re gluten-free, you can use the drop-down menu on our events page to view the best classes to fit your needs. If a class you’re interested in doesn’t appear in that filtered view, please email us before registering and we’ll see if the class’s menu can be modified.
All class and event purchases at The Pantry are non-refundable. If you’re unable to attend, you are always welcome to transfer your ticket to a friend or family member.
We understand that plans can change. When possible, we are happy to offer a credit or a transfer to a future event if we are able to fill your spot from our waitlist. Because our classes are small and ingredient-driven, this is not guaranteed and depends on demand and timing. Cancellations made within 48 hours of the event are not eligible for credit or transfer, as we are typically unable to fill those spots on short notice.
