Walk into any knife shop and the array of selection can be a dizzying experience. Western versus Japanese-style knives? Chef’s knives versus Santoku? And just what is a utility knife anyway? Join Darin Gagner as he guides you through the ins and outs of how to choose the perfect knife for you. Along with discussing care and maintenance, materials and handles, and sharpening systems, you’ll also be able to practice your knife skills with a variety of different styles of knives to make chickpea tagine with kale, olives, harissa, and fennel along with couscous tabbouleh with tomatoes, mint, and cucumber.
