Here in the Pacific Northwest we try to stretch the summer out as much as we possibly can. Discover your inner Italian nonna in this workshop on the craft of handmade pasta using the last bits of that perfect summer harvest. Abby Canfield will teach you the fresh pasta basics: dough preparation and kneading, rolling and shaping, and drying for storage. You’ll make a variety of pasta shapes to complement your late summer feasts. On the menu: orecchiette with charred sweet corn, chilies, and buttermilk; lorighittas with bacon, clams, tomatoes, white wine, and mint; capunti with charred eggplant, garlic, and grilled green beans; and late Summer panzanella with grilled romaine, stone fruit, and fresh herb vinaigrette.
