Confused by the vast array of classic sauce options? Feeling ready to take your sauce-making skills up a level? Then this class is for you! By the time Laura Pyles is through with you, you’ll have the concepts and the techniques you need to make modern versions of classical sauces, as well as how to create your own! You’ll learn the basic skills that form the backbone of sauce making: clarifying butter, building hot and cold emulsions, thickening sauces, and learning how to balance your finished creations. You’ll use those skills to make bernaise, gastrique, coulis, vinaigrette, anglaise and bordelaise, then you’ll try them all on a variety of dishes.

If you have had symptoms of covid or if you have been in close contact with someone with covid in the past 14 days, you will need a negative covid test to attend class.
