There are few things more satisfying than baking your own loaf of crusty bread — except, possibly, baking your own batch of buttery, springy, indulgent brioche. Heather Newton will show you methods for mixing and kneading doughs, as well as how to shape your bread into loaves, buns, rolls, and braids as you make bacon, egg, and gruyere brioche rounds with fresh chives; spinach and caramelized onion brioche spirals; brioche tarts with pastry cream, toasted hazelnuts, and apple quince compote; and a cardamom brioche braid with pecan caramel sauce.
