Pelmeni may have originated in Siberia or Ural, and may have been inspired by Chinese or Mongolian dishes — either way, these tiny stuffed dumplings are known today as the heart of Russian cuisine. The so-called “ear bread” comes in many varieties of fillings and sauces, and in this class Marie Rutherford will teach you one recipe with potato, cabbage, sauerkraut, and coriander filling, and another with pork, dried apricot, and curry. You’ll practice folding and crimping, as well as make a hot sauce and fresh herb salad to accompany the pork pelmeni, and spiced yogurt with browned butter to drizzle over the potato version.
This is a live, hands-on cooking class held in your kitchen via Zoom. Class is meant to be as interactive as it would be at our table, with the instructor teaching you how to prepare each recipe. There are two options for gathering ingredients for this class! You can shop for your own ingredients or we are happy to pre-measure ingredients and assemble them into a 4-serving kit. And if you like to sip wine while you cook, consider adding a lovingly paired bottle with your kit!
