Weekends are when you can take a little extra time in the kitchen, and what better way to simmer away the day than with a braise? Our favorite in our series focusing on techniques, this class will help you master the braise. Jay Guerrero will show you which cuts of meat are great for braising and how to build complex layers of flavor while you make kare kare, a classic Filipino dish of oxtail braised in peanut sauce with eggplant, long beans, and bok choy. You’ll learn about the history of this dish and how to make the traditional accompaniment of ginisang bagoong (sauteed shrimp paste) and perfect steamed rice.
This is a live, hands-on cooking class held in your kitchen via Zoom. Class is meant to be as interactive as it would be at our table, with the instructor teaching you how to prepare each recipe. There are two options for gathering ingredients for this class! You can shop for your own ingredients or we are happy to pre-measure ingredients and assemble them into a 4-serving kit. And if you like to sip wine while you cook, consider adding a lovingly paired bottle with your kit!
