Vietnamese cuisine has layers and layers beyond the best-known restaurant dishes, and in this class Michelle Nguyen dives deep into homemade Vietnamese rice noodles. Traditionally crafted from a velvety rice batter that’s spread onto fabric and steamed; its ethereally thin sheets can be used for a variety of dishes. You’ll roll your fresh noodles into banh cuon (rice-noodle rolls filled with pork and woodear mushrooms, then topped with bean sprouts, fried shallots, and cucumbers) and cha lua, a Vietnamese pork roll cooked in banana leaves, that’s typically served with banh cuon. You’ll mix your own nuoc cham dipping sauce and sit down for a feast!
