There’s something about the way a few simple ingredients come together to make magic in cacio e pepe that has kept it a favorite for centuries. It is a dish made possible by traveling shepards picking up fresh pasta and spices while tending to their grazing herds, so come travel with us! This spring, Abby Canfield will take us to Rome, where she’ll teach us about the local flavors, techniques, and traditions. You’ll make your own homemade tonnarelli pasta to create the perfect cacio e pepe and you’ll enjoy it alongside carciofi alla Romana (artichokes braised with olive oil, white wine, and herbs). Who knows, maybe you’ll be able to show off your skills cleaning artichokes and cooking them “Roman” style on a real trip to Rome!
This is a live, hands-on cooking class held in your kitchen via Zoom. Class is meant to be as interactive as it would be at our table, with the instructor teaching you how to prepare each recipe. There are two options for gathering ingredients for this class! You can shop for your own ingredients or we are happy to pre-measure ingredients and assemble them into a 4-serving kit. And if you like to sip wine while you cook, consider adding a lovingly paired bottle with your kit!
