The beautiful and challenging terrain has led to some truly unique cooking techniques in smoking, preserving, and geothermal baking. Join Abby Canfield in class to make homemade rugbraud with herbed butter and pickled winter vegetables, onion skin smoked beets with herbed skyr and savory bilberry sauce, kjotsupa braised lamb and root vegetables with roasted carrot puree and dill oil, and round out the meal with ponnukukur Icelandic pancakes with cardamom, cinnamon poached pears, and whipped skyr.
