June 6 – Picnic Charcuterie: Rillettes

Charcuterie has become a staple in most restaurants, but many home cooks still leave it to “the pros” to understand the mysterious world of preserved meat. Never fear, Marie Rutherford is here to teach you the ins and outs of her favorite potted meat: rillettes! Made from a wide range of ingredients that are whipped into submission and sealed with a layer of flavorful fat, rillettes are perfect for any summer spread. In class you’ll create your own homemade pork rillettes with orange, fennel, and chilies that you’ll devour with a fresh rhubarb and herb relish. You round out the meal with a watercress, cherry, and almond salad with mustard vinaigrette and hopefully take your feast out of the kitchen for a perfect summer picnic!

This is a live, hands-on cooking class held in your kitchen via Zoom. Class is meant to be as interactive as it would be at our table, with the instructor teaching you how to prepare each recipe. There are two options for gathering ingredients for this class! You can shop for your own ingredients or we are happy to pre-measure ingredients and assemble them into a 4-serving kit. And if you like to sip wine while you cook, consider adding a lovingly paired bottle with your kit!
