When the days get shorter and the light wanes, stockpiling citrus and making beautiful things with brightly colored balls of sunshine keeps away both scurvy and the winter blues. Did you know that a Meyer lemon is a cross between a mandarin and a lemon? Did you also know that there are 4 main types of kumquats and that the peel is sweeter than the juice? RENEE BEAUDOIN did and she’ll share much, much more in this class. On the menu: salt-preserved lemons with pink peppercorns; confited kumquats with sugar and vanilla; lime yuzukoshō (Japanese fermented relish with citrus and chilis); and Meyer lemon curd.
This is a live, hands-on cooking class held in your kitchen via Zoom. Class is meant to be as interactive as it would be at our table, with the instructor teaching you how to prepare each recipe. There are two options for gathering ingredients for this class! You can shop for your own ingredients or we are happy to pre-measure ingredients and assemble them into a 4-serving kit. The kit for this class will include one quart sized mason jar for preserving. And if you like to sip wine while you cook, consider adding a lovingly paired bottle with your kit!
