While homemade puff pastry is so much better than anything that comes in a box, it’s known as a daunting and time-consuming task for even the most practiced bakers. Popular with pastry chefs, quick puff pastry (also known as blitz puff and rough puff) is a great introduction to the practice of laminating dough – creating all the flaky delicious layers of the original without the blood, sweat, and tears. In class, Katharine Wright will teach you to make cardamom and brown sugar palmiers; savory mushroom and thyme vol-au-vent; apple rosemary almond turnovers with nutmeg glaze; and a chard, bacon, and goat cheese tart that will change your baking game for good.
