For people of Mexican heritage, guisados tell the story of home. These deceptively humble-looking “stews” offer comfort, depth of flavor, and endless variety, and can be eaten alongside rice and beans, or scooped up with a tortilla and eaten like a taco. In most Mexican cities and Mexican-American communities, fondas (diner-style eateries) sling guisados to fuel up throngs of lunchtime office workers so they can get through the rest of their work day. In this class Gino Garcia will teach you some of his favorites: chicharrón en salsa verde (fried pork skins in green salsa); bistec picado (steak and green peppers in pasilla salsa), and rajas con crema (roasted poblano chiles in cream sauce), all served alongside a pile of warm homemade corn tortillas.
