From deeply humble beginnings as sustenance for weary travelers, to the white linen tablecloths of the finest restaurants, Russian blinis have been around the world and back. These delicious little pancakes are the perfect vehicle for some of the best seafood of the season, and Becky Selengut will teach you how to mix and cook to perfect both buckwheat blini and yeasted blini. You’ll be adorn your creations with homemade gin-and tonic cured salmon, herbed creme fraiche, ikura (salmon eggs), pickled red onion, cucumber, fried capers, smoked trout, pickled beets, preserved lemon and horseradish cream.
This is a live, hands-on cooking class held in your kitchen via Zoom. Class is meant to be as interactive as it would be at our table, with the instructor teaching you how to prepare each recipe. There are two options for gathering ingredients for this class! You can shop for your own ingredients or we are happy to pre-measure ingredients and assemble them into a 4-serving kit. And if you like to sip wine while you cook, consider adding a lovingly paired bottle with your kit!
