You would be hard pressed to find a culture anywhere in the world that lacks some kind of dumpling. Stuffed, folded, steamed, fried, poached, there are so many ways to prepare these perfect little packets of comfort, and Chinese dumplings are some of the most beloved worldwide. Join Elaine Sher in class to learn traditional Cantonese dumpling making from her family’s recipe that will warm your kitchen all winter long. In class you will learn how to make from-scratch dough and a secret recipe for a Cantonese-style marinade that you’ll turn into classic choy yuk gaau zi (pork and cabbage filled dumplings) and gai yuk gaau zi (chicken, corn, and bok choy dumplings). You’ll learn multiple ways to wrap and pleat your dumplings and how to fry and boil them to perfection. You’ll enjoy your dumplings with classic Chinese Shanxi vinegar with ginger, and spicy ponzu sauce with Lao Gan Ma spicy chili crisp for dipping.
