Because who doesn’t love a party wing? Join Becky Selengut as she celebrates one of her favorite food groups, starting with classic buffalo wings with homemade blue cheese sauce made famous in the eponymous town in upstate New York. Save some room, however, as there are two more variations to try out: you’ll marinate flats and drumettes in black pepper, spices and herbs for roasted coriander and black garlic chicken wings and before the oil cools, you’ll make crispy fried chicken wings with orange, honey, and togarashi glaze. You’ll eat your bodyweight in tiny poultry pieces, along with homemade sweet chile sauce, crudité and a simple wedge salad. You’ll get a primer in perfect double fry technique, how to reuse and store oil for another meal, and the ease and benefits of preparing the high-heat roasted wing.
