Layer cakes have long stood as an icon of American culture. For many, they represent celebration, togetherness, and tradition, triggering a secret sweet tooth for that cake our mom, uncle, grandma, or cousin always made for our birthday. In the South, where cake and pie fight for the crown, layers of cake stand impossibly tall and regal like your Aunt Judy’s hair on Sunday. Brian Medford is our resident champion of layer cakes, so come to class and let him teach you to bake, fill, and ice your way to glorious heights. In class, you’ll make caramel cake with penuche frosting, 15-layer cake with boiled chocolate frosting, blackberry jam and walnut cake with butterscotch cream cheese frosting, and red velvet cake with cream cheese frosting.
