Aug 28 – The Grand Trunk Road Trip

The Grand Trunk Road stretches over 1,500 miles and connects Afghanistan, Pakistan, India, and Bangladesh. It’s a road one must share with cars, carriages, rickshaws and cyclists at all hours of the day, connecting cultures that people and politics have separated over time. In this class Sabeen Sheikh shows you how to make some of her street-food favorites that pop up along this famous route, while sharing the common threads of flavor and culinary technique that run throughout South Asia. On the menu: pakoras (fried vegetables in a spicy batter); tawa chicken (marinated and grilled chicken with ghee, onions, and fresh green chillis); raita (yogurt flavored with cumin, cucumber, and mint); maash daal (black lentils cooked in tomato sauce); and sooji halwa (toasted semolina dessert flavored with cardamom and rose).

Please make sure you and your guests know to bring either their vaccination card or a photo of their card as well as their ID. If you have had symptoms of covid or if you have been in close contact with someone with covid in the past 10 days, please follow the current CDC guidelines. If you are sick, please stay home. Guests may be required to wear a mask during instruction, depending on the local transmission rate at the time of class  (we will have some extra masks on hand if needed).
