Join Neil Duncanson as he introduces you to hot and cold smoking methods in your own kitchen. You’ll learn how to set up an indoor smoker, which smoking method to use when, and how to impart a balanced smokey flavor into your favorite ingredients. On the menu: applewood hot-smoked spatchcocked chicken; hot honey with arbol chilies and cider vinegar; wedge salad with green goddess dressing, smoked gouda, and black pepper croutons; roasted radishes tossed in cold-smoked butter; and cold-smoked nuts with sesame and vanilla.
