London is high on the list for any cocktail aficionado, both for its present-day bar scene and for its place in history as the birthplace of so many classic drinks. In this class Renée Beaudoin will take you on a trip to the U.K.’s largest city, where you’ll learn about infusions, fermentation, mixing, and a bit of cocktail lore. You’ll make the classic Pimm’s Cup, complete with homemade fermented ginger lemon soda; the Pollen, made with elderflower and bee pollen–infused sherry; and the Chelsea Sour, Renée’s own creation, with thyme-infused dry curacao and homemade marmalade simple syrup — as well as Sherried Mushrooms on Toast, to accompany it all.
