Twice Cooked Fries
Homemade Spiced Mayonnaise

Shopping List:
Produce:
cilantro
fresh dill
shallot
celery
ginger
garlic
Russet potatoes

Dairy:
butter

Dry Goods / Pantry:
wheat beer, such as Ommegang, Allagash White, or Hoegaarden White
coconut milk
Dijon mustard
white wine vinegar
peanut or other high-heat oil, for frying
neutral oil, such as safflower or grapeseed
Kosher salt, to taste

Proteins:
mussels
egg

Spices:
coriander seed
cumin seed
black peppercorns
ground turmeric
your desired spice, such as curry powder, chili powder, or smoked paprika
Freshly ground black pepper, to taste

Cutting board
Sharp chef’s knife
Measuring spoons
Spice grinder or mortar and pestle
Deep skillet or pot with lid
Slotted spoon or pair of tongs or spider for straining
Serving bowl for the mussels
Heavy bottomed pot for frying
Baking sheet with fitted cooling rack
