On the menu:
Smoked trout
Quick trout stock
Winter salad with smoked trout, blood orange, toasted pine nuts and horseradish yogurt dressing
Pan seared trout with roasted squash, mushrooms, green olives and crispy fried sage

Produce:
fresh horseradish
lemons
blood orange
chives
butter lettuce (you can sub frisee or escarole)
radicchio
delicata squash
red onion
thyme sprigs
small carrot
celery stalk
sage leaves
mushrooms (shiitakes and creminis)

whole fat yogurt

mayonnaise
wood chips or 1-inch section of smoke wood stick

high heat oil
