We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then two days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Punjabi samosas with spiced potato and peas
Summer vegetable pakoras
Date tamarind chutney

Shopping List:
green beans
Italian eggplant
medium red or yellow waxy potatoes
cooked peas (or thawed frozen peas)


Dry Goods / Pantry:
2 cups gram flour* (Pakistani or Indian chickpea flour labeled besan)
3/4 cup jaggery or light brown sugar
5 ounces tamarind paste (usually in a block form with seeds)
About 2 quarts vegetable oil
3 cups all-purpose flour
About 2 tablespoons kosher salt

1 teaspoon dried fenugreek leaves (methi)
1/2 teaspoon pomegranate powder (anaardana)
2 teaspoons Kashmiri red chili powder
1/2 teaspoon mango powder (amchoor)
1 teaspoon whole carom seeds (ajwain)
1/2 teaspoon garam masala
1/2 teaspoon black mustard seeds
1 tablespoon cumin seeds
1 tablespoon coriander seeds
1/2 teaspoon turmeric powder

*Pakistani gram flour is different from chickpea flour in the US. Make sure to buy it from a Pakistani or Indian grocer for this recipe. We recommend the Apna Bazar in the Seattle area for the flour and many of the spices in this class.
