We are so excited to host you in your upcoming Smoking at Home class!
To help set yourself up for success, here are a few things to gather and prepare before class.
Please carve out around 30 minutes before class to get yourself set up.

On the Menu:
– Applewood Hot Smoked Chicken
– Wedge Salad, Green Goddess Dressing, Black Pepper Croutons, Smoked Gouda
– Hot Honey with Arbol Chilies, and Apple Cider Vinegar
– Note: the ingredients listed below are enough for four people.


Shopping List:

1 garlic clove
2 tablespoons fresh lemon juice
1 cup loosely packed basil
1/2 cup packed dill
1/2 cup packed tarragon
1 head iceberg lettuce

4-5 tablespoons butter
4 ounces sour cream
8 ounces gouda cheese, goat or cow’s milk

Dry Goods / Pantry:
4 ounces mayo
3/4 cup extra virgin olive oil
3 anchovy fillets, or 3/4 teaspoon anchovy paste
4 tablespoon safflower oil (or any high heat neutral oil)
1/2 loaf of bread (fresh or slightly stale will work)
1/2 cup honey
2-3 tablespoons apple cider vinegar

1 whole organic chicken (3-5 pounds total weight)

Kosher salt (if you have grey salt, feel free to use that!)
Freshly ground black pepper
Flake salt
1/2 teaspoon garlic powder
4-6 arbol chilies (broken is fine)

Equipment List:
– large chef’s knife
– 2 large cutting boards (one for chicken one for vegetables)
– 2 cups apple wood chips OR a 1/3rd compressed apple wood smoking log about 4-5 inches long total
– food processor or vitamix blender for dressing
– 1 sheet tray with a wire rack for the roast chicken
– 1 sheet tray for baking croutons
– 2 rubber spatulas
– digital thermometer
– oven
– foil (at least 3-4 feet)
– large stock pot
– straining colander OR – mesh basket strainer, or a perforated metal pan or basket
(one you would use to drain pasta with)
– 1 peeler
– 1 lighter
– 2 medium- large mixing bowls

Drink Suggestions:
Wine Pairing: Austrian Zweigelt. The sweet and sour, dark fruit and spice notes found in Zweigelt goes wonderfully with the distinct flavor of smoked food without tasting too sweet.
Non-Alcoholic: Cranberry Kombucha
