Seafood Paella – Shopping & Equipment List
We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.
On the menu:
Seafood Paella with Shrimp, Cod, Mussels, and Calamari
Sherry Glazed Piquillo Peppers with Manchego
Shopping List:
Produce:
onions
garlic
tomatoes
parsley
lemon
shallot
thyme
frozen peas
Dairy:
manchego cheese
Dry Goods / Pantry:
olive oil
short grain rice
white wine
squid ink (optional, but it is truly delicious)
brown sugar
sherry vinegar
piquillo peppers
Flake salt, to garnish
Kosher salt, to taste
Proteins:
firm white fish (rockfish or cod)
shell-on shrimp
calamari
mussels (make sure you pick up your mussels as close to cooking them as possible, and store them on ice in your refrigerator!)
Spices:
bay leaf
smoked paprika
Freshly ground black pepper, to taste
Equipment List:
Paella pan or large 12 inch pan (not non-stick)
Wooden spoon
Cutting board
Chef’s knife
2 kitchen towels
Cookie sheet lined with parchment paper
1 medium saucepan
1 small saucepan
Pastry brush
Bowls for preparing your seafood
Grocery Shopping Resources:
– Squid ink is available at Uwajimaya or other Asian markets as well as Big John’s PFI.
– Piquillo peppers are sold at finer grocery stores, like Central Market.
