On the menu:
Aloo samosas with spiced potato and peas
Keema mattar samosas with minced beef and fenugreek
Mint and cilantro chutney

Shopping List:

Produce:
garlic
ginger
green chilies (like serranos)
small lemon
cilantro
mint
medium red or yellow waxy potatoes
yellow onion
Roma tomato
cooked peas (or thawed frozen peas)

Dry Goods / Pantry:
kosher salt
all-purpose flour
ghee
vegetable oil
tomato paste

Proteins:
ground beef

Spices:
whole carom seeds (also called “ajwain”)
ground coriander
ground cumin
mango powder (amchoor)
garam masala
Kashmiri red chili powder
turmeric powder
kasuri methi (dried fenugreek leaves)

Equipment List:
Cutting board
Knife
Blender
1 large mixing bowl
Kitchen towel or plastic wrap to cover dough
1 heavy-bottomed saucepan
Rolling pin
Pizza cutter or knife
Small bowl for water
Deep heavy-bottomed pot to fry the samosas
Large sauté pan
Plate lined with paper towels to drain the samosas
