We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Focaccia di Recco
Chickpea Farinata with Arugula and Zucchini Salad
Pesto Genovese

Shopping List:

Produce:
zucchini
arugula
lemon
garlic clove
basil leaves

Dairy:
grated parmesan cheese (Parmigiano Reggiano is best)
grated pecorino cheese (pecorino sardo or romano is best)
stracchino or crescenza cheese (taleggio, brie, or camembert with the rind removed will work in a pinch)

Dry Goods / Pantry:
bread flour or all-purpose flour in a pinch
chickpea flour
extra virgin olive oil
pine nuts
kosher salt
flake salt
Freshly ground black pepper


Equipment List:

Large bowl for salad
Large mixing bowl for focaccia dough
Medium mixing bowl for farinata
10-12 inch skillet for farinata
2 quarter sheet trays (9.5 inches by 13 inches) for focaccia di recco
Whisk, wooden spoons, and other utensils
Cutting board and chef knife
Mortar and pestle or food processor for pesto
Microplane zester
