On the menu:
Dakgangjeong (Korean Fried Chicken)
Kimchijeon (Kimchi Pancake)
Sesame Soy Dipping Sauce
Yakult Soju Punch

Shopping List (for 4 servings):
Produce:
3 cloves garlic
1-inch knob of ginger
4 scallions
1 lemon
1 lime

Dairy:
1 package (5 bottles) of Yakult, a probiotic dairy drink
1 1/4 cups kimchi (it’s not dairy, but it is refrigerated)

Dry Goods / Pantry:
1/2 cup rice flour (such as Bob’s Red Mill)
1/2 cup all-purpose flour
1 cup potato starch
7 cups high heat cooking oil, such as safflower
3-4 large dried chile peppers, such as pasilla
1/2 cup soy sauce
2/3 cup honey
2 tablespoons unseasoned rice vinegar
1/4 cup brown sugar
1/2 teaspoon baking powder
2 tablespoons sugar
1 teaspoon fish sauce
1 teaspoon toasted sesame oil
1 (375 millilitre) bottle soju, any flavor
1 cup soda water
1 tablespoon kosher salt

Protein:
3 1/2 pounds whole chicken wings

Spices:
1 teaspoon freshly ground black pepper
1 teaspoon powdered ginger
1 tablespoon plus 1 teaspoon gochugaru (Korean chile flake) (If you can’t find it you can substitute 50% cayenne and 50% paprika)
1 teaspoon garlic powder
2 tablespoons sesame seeds

Equipment List:
Cutting board
Chef’s knife
Large bowl for marinating the chicken
Heavy bottomed pot for frying the chicken
Tongs
Thermometer for the fry oil
Cooling rack and sheet tray or wire strainer and bowl to drain the wings while frying
Large pan for the sauce (non stick is fine)
Silicone spatula
Large bowl for batter
Fork or whisk
Medium bowl for kimchi mixture
10-inch skillet (not non-stick)- if you have a smaller one that’s fine, you’ll just have smaller pancakes
Thin metal spatula, like a fish spatula
Small bowl or cup for dipping sauce
Cup for brown sugar syrup
Pitcher for soju punch Tiny paper umbrellas! (optional)
