We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Khoresh rivas (beef and herb stew with rhubarb)
Persian steamed basmati rice with crispy saffron tahdig
Tokhm-e sharbatie (chia seed beverage with rose water and lime)

Shopping List:

flat leaf parsley

Dry Goods / Pantry:
white basmati rice
extra virgin olive oil
neutral oil (like safflower, canola, etc…)
tablespoons sugar
chia seeds
rose water
fine sea salt

beef (chuck, round, or another stew meat), cubed

dried mint
saffron threads
ground turmeric
freshly ground black pepper


Equipment list:
Food processor for the herbs
Large Dutch oven for the stew
Large frying pan for the herbs
Small saucepan for Sharbat
Pitcher, to hold 32 oz liquid
Large pot to parboil the rice
Medium sized pot (nonstick preferred) for cooking the rice
Wooden spatulas
Clean kitchen towel
Ice cubes, for serving the tokhm-e sharbatie
