Keema Kofta – Shopping & Equipment List
We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.
On the menu:
Lamb keema kofta (fried lamb and potato dumplings) with spiced tomato sauce
Jeera Rice (Cumin Rice Pilaf)
Shopping List:

Thai chili peppers
Russet potato

ghee
Dry Goods / Pantry:
ginger paste (can substitute with finely crushed or grated ginger)
garlic paste (can substitute with minced garlic)
white basmati rice (or any long-grained white rice)
fine breadcrumbs
high heat oil
sugar
salt
Protein:
ground lamb (or goat)
Spices:
cinnamon stick
bay leaves
black peppercorns
green cardamom pods

Shah Jeera black cumin seeds (or cumin seeds)

Wide-mouth saucepan with lid or Dutch oven
Medium pot (to boil water + cook lamb)
Medium pot (to boil the potato then for making the sauce)
Wide mouth pot or wok (for deep frying)
Wooden spatula
Fine-mesh strainer (optional)
Wooden/silicone spatula
Strong blender
2 large mixing bowls
Stainless steel fine-meshed spider strainer (or slotted spoon)
Paper towel lined tray or wire rack
