full fat plain yogurt

Dry Goods / Pantry:
durum wheat flour (or whole wheat flour)
black salt (or fine sea salt)
ginger paste (or roughly 3 inches ginger to make your own)
garlic paste (or roughly 12 garlic cloves to make your own)
neutral oil
fine rice flour
dry red chili peppers (such as arbol)
sugar
kosher salt
freshly ground black pepper

Proteins:
eggs
boneless chicken thighs

Spices:
chaat masala
amchoor (dry mango powder), optional
Indian red chili powder
garam masala
turmeric powder
cinnamon stick
bay leaves
