We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
chicken karaage with togarashii honey and lemon
sweet potato dengaku (miso glazed sweet potato with crispy sweet potato skin)
kinpira renkon (braised lotus root with sesame and mizuna)

Shopping List:

Produce:
ginger
lemon
medium sweet potatoes
lotus root
scallions
mizuna (or substitute arugula or watercress)

Refrigerator:
aka (red) miso (or substitute any type of miso)

Protein:
bone-in skin-on chicken thighs

Dry Goods / Pantry:
mirin
dry sake, such as Gekkeikan or Sho Chiku Bai
soy sauce
sugar
potato starch
high heat oil, such as safflower
honey
rice vinegar
sesame oil
dried red chile, such as japonesa or chile d’arbol
toasted sesame seed
kosher salt, plus more to taste

Spices:
shichimi togarashii (or substitute chili flakes)
freshly ground black pepper

Equipment List:
Cutting board
Sharp chef’s knife
Microplane or fine grater
Medium bowl for marinating chicken
Baking sheet and rack
Medium bowl for potato starch
Pan with sides at least 5-inches tall for frying
Slotted spoon or spider for frying
Candy or digital thermometer – this is very useful!
Small saucepan and bowl for the honey
1-2 silicone spatulas
Baking sheet for sweet potatoes
Bowl for lotus root
Peeler
Medium saute pan
Bowl for mizuna and scallion greens
