Wine List:
1 bottle Domaine Sigalas ‘Aa’ Assyrtiko, Athiri 2017
1 bottle Tenuta Delle Terre Nere, Etna Bianco DOC, 2018
1 bottle Dolores Cabrera Fernández, La Araucaria Tinto, Paraje La Perdoma, 2018

Alternative wines:
If you are not in Seattle, or can’t make it to the Pantry to pick up a wine tasting pack, I recommend seeking out these other delicious alternatives:

Wine: Assyrtiko, Santorini
Style: Still, dry
Alternative: Any dry white from Greece

Wine: Etna Bianco, Sicily
Style: Dry, still, white wine
Alternative: Any still white wine from Italy

Wine: Listan Negro
Style: Dry, light bodied, still red wine
Alternative: Any dry, light bodied, still red wine from Spain

If you are unable to find wine from these regions, just grab a glass of your favorite and you can still follow along and plan to explore some of these wines when you are able to seek them out.
